been craving to make some especially after watching another quirky Japanese Netflix show 'Samurai Gourmet'! Used some reserved short rib from the 72 hr cook, wallawallas, shoyu, cayenne and a touch of 'better than gourmet beef ' ... sweated. Then into some sieved potatoes , egg wash, panko with a bit of pickled fennel. I usually go for a fresh wasabi mayo but went with some Bulldog this time... a perfect combo.. oishi 👌
