tried to get some crispy skin, crispy sure.. too dark though. Needs some more work on it. Hotter oven, less broiler maybe.

looks nice! Not sure if you've tried it, but after the initial cook, freeze the portions, sear, chill (and freeze if for another time), retherm and sear again. It's a really nice way to get it consistently. Chris Young had posted something about it a few years ago if I recall and it's awesome.

Seat thawed product or straight from freezer? This was soya vide, portioned, frozen, thawed then heated in hot oven from cold.

after initial cook, chill, portion, chill in freezer, then sear and store portions. Reheat sv a couple degrees below cooking temp and sear to finish.

Thanks, I'm getting much more confident in my moves on the plate. I do always feel I'm missing an element though.

I think you've got it pretty spot on. My thought is that less is more. You can put too many things on a plate and all of a sudden it looks like the dogs' breakfast. You've got nice, pleasing colors going on with the star of the show prominently displayed on the top. I 've seen lots of platings where the main was hidden under a barrage of various bits and pieces. So IMHO you did very well and didn't overdo it.

You have to eat what you make!! I actually just made this for myself. Was pretty tasty. I wanted a sauce of some sort.. that's always my critism. I never have stock on hand though. I always want a pantry with pork, beef, chicken, duck, etc all on hand (and obviously all the same fats in the freezer) I just never do it. lol.
