Plenty of shortcuts but the Italian market in my neighborhood has such great sausages and I had a serious craving for them. Now I get to eat it all week.

Remove the casing, crumble and brown the sausage along with the diced pancetta, then reserve. Add minced carrot, celery, onion and fennel to the pot with olive oil and fry for a few minutes. Add chopped garlic and about 2 tbs of tomato paste and cook out. Deglaze with a glass of wine, reduce, then add the tomatoes, meat, and whatever herbs you like. Simmer for 1-2 hours. Finish with a little butter, parmigiano and fresh basil.
I'd hesitate to even call it a recipe. This is a weeknight version of Sunday gravy, my favorite, which simmers all afternoon and I normally make with chunks of pork shoulder or beef shanks, homemade meatballs, and whole sausages. (I also usually use red wine and omit fennel.)
