Smoked albacore tuna/ chickpea miso/ chickpea miso and persimmon vinegar vinaigrette.
Steelhead trout/ roasted carrots/ pickled carrots in orange juice/ orange suprêmes/ orange vinaigrette.

Heirloom Tomatoes/ gooseberries/ jalapeño/ mozzarella/ Parmesan/ basil/ chives/ croutons/ good olive oil.
Seasoned with a vinaigrette of crush raspberries, raspberry vinegar and olive oil.
