Dry Ice
John_Millin_418427
would it be easier to just buy food grade dry ice pellets for the ice cream? Would not have to smash it before grinding it. Any thoughts?
Thanks.

Pellets are still relatively large compared to the powder you get from blending. Your base won't freeze as quickly, will be more likely to carbonate, and will need to temper for longer (so that you're sure that there aren't any big chunks of frozen CO2 inside). However, if you have access to pellets, they're easier to work with and measure out in the pre-blending stage and will save you the time and energy bashing up a bigger block.

I've had the best success pulverizing dry ice to a powder in my blender before making ice cream. Smaller pieces are better, but a powder dissipates more quickly. If I had access to the pellets, I would probably pulverize those too.

I would still pulverize it but I was thinking that with pellets I could just go straight to making the powder without having to break it up.

Go for it

Either way still needs to be ground to a powder, but it may be easier to grind pellets. What is the cost difference? It isn't difficult to smash up if there is a cost difference.

Yeah the cost is much different. Was just thinking about safety even with the dry ice covered when smashing but cost really isn't an issue for me. Thanks everyone!
