But ChefSteps take it as always to the next level and on the internet 99 of 100 eatable cookie dough recipes are awful.

Well, if your looking for a recipe for cookie dough, they already have a few cookie recipes. You could always throw that in a vacuum bag and just heat it until it is sufficiently pasteurized. Cookie dough, be it store bought, made from scratch, or made for the purpose of eating all tastes the same to me.

Take a recipe you like the taste. Spread the dough in a thin layer in your sous vide bags. Heat 56C for a couple of hours. Only problem may be the texture. At 56C the eggs won't cook but the butter or chocolate will melt for example.

You can pasteurize eggs in their shells in a 55-57C water bath for 75-120mins. If you want eggs in your edible cookie dough, then I'd think that's the way to go.
As for flour, you could toast it
high and fast
or
low and slow
. For extra flavor you could replace butter with "regular" brown butter or a
more intense
variant, and use
toasted sugar
.
