This is just like eggslut "slut".. which I've wanted to try!
So, puree in jar, crack egg on top pop on lid and cook at 63, for how long? My brother was raving about this dish and seems like a fun one to make.

Yep, "Eggslut" tribute, potato purée 3/4 full the far, crack a large egg on top, finger tighten the lid. SV at 63°C, for about 50 minutes. My potatoes were warm, I would guess about 55°- 60°C. I tried it with cold potatoes my first try, and the bottom of the egg wasn't fully set.

I was thinking about how you did that and came to the conclusion that potatos would need to be warmed to pull this off. Thanks for the time info... I knew I wasn't going to have the patience last night to do in a jar!

It is not very complicated.
Ingredients
6 medium sized whole raw potatoes, skin on
salt and pepper to taste
Extra virgin olive oil
