on the joule app it says to brûlée after two hours. I guess that's just the earliest one can brûlée.
Can you brûlée a few days later as well?

Are you asking if you can make the custard, keep it in the fridge, then add and caramelized the sugar at some point in time in the future?

I've made and kept in the fridge many times (it's really the only way I've done it). Keep them chilled and when ready to brulee, remove any moisture on the tops, sprinkle your sugar and brulee.
Definitely don't brulee before and keep the bruleed custard in the fridge.

Brian that is my question. Seems like Vinlo is fine with it.

Yep, not a problem. As they are also pasteurized they last a while in the fridge.
