200ml Heavy Cream
2 Eggs
125g Sugar
90g Peanut Butter
75g unsalted Butter
1g Salt
1.5 Sheet Silver Gelatin
Place Peanut butter in Blender or immersion blender Cup and set aside. Combine cream, eggs, sugar and salt in heat safe bowl. Cook over double boiler until temp reaches 178F. remove from heat and add to peanut butter. Add bloomed Gelatin and whisk until melted. Let mixture cool to 120-130F, then blend in butter one piece at a time. Set mixture into mold and freeze until solid. Let temper on plate 8 min or so before serving.
