I've had the Thai bug since your pad post .. maybe tomorrow .. looks like some good stuff!
Are you making your own curry?
fisher23
Yes, the only thing I can't get right now is the cilantro with roots, I will have to wait until mine grows. So I just used a little extra cilantro and got a brighter color.

Green Curry with Chicken
Curry Paste
5-10 small fresh hot green chilies
3 mild green chilies
2 Tablespoons lemon grass, finely chopped
1 Tablespoon galangal, thinly chopped
1 teaspoon kaffir lime rind, thinly sliced
2 Tablespoons shallots, roughly chopped
3 Tablespoons garlic, roughly chopped
1 Tablespoon coriander (including roots), roughly chopped
1 teaspoon coriander seeds, roasted
1/2 teaspoon cumin seed, roasted
1 teaspoon salt
1 teaspoon white peppercorns
1 teaspoon shrimp paste
Seasoning
2 Tablespoons fish sauce
2 Tablespoons Palm sugar or brown sugar
The rest of the ingredients
1 cup chicken breast cut in cubes
2 cups thick coconut cream
1 1/2 cups coconut milk
Small egg plants cut in quarters or use pea size if you can find them
2-3 kaffir lime leaves
Small fresh chilies
1/2 cup Thai basil leaves
1. In a blender, add all the curry paste ingredients with 1 cup of the coconut cream. Blend until smooth.
2. Heat remaining coconut cream in a wok until it boils up. Then add the curry paste to the wok. Keep simmering until the mixture starts to dry out and some green oil forms on top. This takes about 15 minutes. Don't let it burn and stir every few minutes.
3. Add the chicken and egg plants and continue to stir until chicken is cooked and egg plants have softened.
4. Add the fish sauce seasoning and taste. You may want more sugar.
5. Add the remaining coconut milk and bring to a boil. Taste again, add more fish sauce or sugar if needed.
6. Add the kaffir lime leaves and basil. Bring to a hard boil for about one minute.
7. Serve with rice.
