So I made a batch of creme brûlée following the chefsteps recipe. Below are my thoughts.
1) the brûlée and the texture are spot on.
2) I would like the custard to be a bit sweeter so gonna try some vanilla extract (1-2 tsp?)
3) after brulleing, the jar gets warm so I extended the rest period from 5 to 10 minutes and put it in the freezer during that time to get cold again.
