METHOD:
This will keep food fresh while waiting for the right time to start cooking so you have the freedom to enjoy your day and still have a great dinner when you arrive home. Your food is as safe as in the fridge.
Preparation:
Ø Add JOULE to a pot or container. An insulated container would be best. Or, alternatively, cover the top with plastic wrap. To help with potential sweating as the ice melts, lay a couple of towels over and around the container.
Ø Fill with ice to the top of the container.
Ø Add cold water until you reach your desired level for your food.
Ø Place your food and ingredients in a ziplock-style bag.
NOTE: When using a ziplock-style bag to cook sous vide, simply place the food in the bag and lower the bag into the water, leaving the mouth of the bag open above the surface. This will cause the air to escape from the part of the bag that’s underwater, creating a tight seal around your food. Clip to the side to prevent any liquids from transferring to or from the bag.
Let’s get cooking:
Ø When you're ready to start cooking, set the desired temperature and start JOULE.
Ø Whatever ice is left in the water bath will disolve as water is heated.
Ø When tempature reaches your desired setting, start the cooking time.
NOTE: It will take approximately 35 minutes to reach a cooking temperature of 130 °F, 54 °C or 40 minutes to reach 145 °F, 63 °C.
Dinner is served:
When you arrive home the food is cooked and ready for the finishing process, allowing your meal to be served in minutes, not hours.
