Joule and ISI salmon

Perfectly cooked salmon. Cast iron sear. Its hard to see but the foam is an infusion of chives and tarragon. Used an ISI siphon. When I get the new clip will want to do a whole fish. Oh, got hip to the siphon from ChefSteps class.
