Pork Carnitas Recipe with Beef?

Hey!!
So I have a 8lb pork shoulder that I am planning on following the premium recipe for pork carnitas:

I have some friends who don't eat pork but eat beef. My question: can I use chuck roast with the same time and temp and expect similar/good results??

drop the temp to the 62C imho. Short rib would be even better (higher temp though)

So I was hoping to get the pork to have a braised like texture so that it can easily be shredded so I was going to do 72C... is that too high for chuck roast? I could buy short rib but I'm thinking it will be more expensive

Should still be ok, just don't open the bag immediately after cooking. Let it sit at room temp for 15min or so. That way the muscles can relax and reabsorb some juices. You could probably shorten the time to 12 hrs as well.
