So lately I'm seeing a lot of this " sponges " which are not baked I was just wondering what they really are, in the recipe Prosciutto, passion fruit, zuta levana from Alina, the sponge calls for:
8 passion fruit
100 g water
100 g sugar
7 gelatine sheet
200 g water
4 g salt
4 g citric acid
Cook the syrup with the passion fruit, add gelatin, whip to stiff peaks and let set, that's it, is there even a savory version ? Thanks
