Drowning in Eggs!

I need help, folks. I am drowning in eggs. My hens are laying like crazy and I need recipes and inspiration of what to do with them all! Yesterday I got 56 eggs and I can't give them away fast enough.

I have over 400 eggs that I want/need to use this weekend. Please help.

I love the frozen custard recipe but I have filled my freezer with maybe 3 gallons of the stuff. Thank heavens I have 4 teenage boys who inhale it.

Then freeze the whites or make macaron cookies or meringue.

Egg bites, if you could find enough jars. Or separate the whites and yokes and freeze in small packages to use later.

I have done salt cured egg yolks, angel food cake, brownies, cookies, frozen custard, and pasta! I now have maybe 200 salt cured egg yolks and I am really happy. I am selling more eggs and may now sell some to a local bakery. Cross fingers!
