Yeah my plating just wasn't coming together how I wanted it to! Off night I guess... everything was super tasty:) I made with the lamb a chimichirri sauce, and a balsamic glaze. Along with a celery root puree and sautéed wild mushrooms ...

How heavy was your leg? I'm doing a leg of lamb (on a lb) marinated in chimichurri. Because it's so small will 24hr be too long? I've seen some people doing 7hrs or so.

I will have to check when I get home of how many pounds that was, I purchased two and threw one in the freeze. I have done the 8 hours it was good, but the 24 hours is way better.. so super tender.
