i cooked a boneless leg of lamb for 27 hours at 130 and it came out a bit mushy unlike the last time when it was pink and perfect. I finished it in the oven at 450 for 12 minutes and it was 3.5 lbs instead of 5 the last time.
Did it cook too long?
