First test dish for my course #3

SV the filet mignon made a shallot and red wine sauce to go with it and filled the onion cups with the sauce. Butternut squash two ways roasted and a puree. Think it might be missing wild mushrooms ... but this will do for dinner tonight.

If wild mushrooms are added in later renditions, perhaps they could be pureed and piped into the onion cups instead, or with the sauce.

Have also done a mushroom puree with roasted beet envelopes which is also quite nice (and goes well w/ beef). Pardon the random responses.
