Start the morning before and have dinner ready the next night.
5-6 lbs Eye of Round, trimmed
4 cloves smashed garlic cloves
2 fresh bay leaves
salt and pepper to lightly coat all sides
Splash of olive oil
Sous Vide at 133° F for 30 hours
After its water bath, cut open, reserve juices (pour into sauce pan), pat dry the roast and place it on a roasting pan. Coat lightly with olive oil and your favorite steak seasoning rub. Roast at 450° to give it some color (about 10-15 min)
Reduce sauce to half. Strain out the chunky stuff and add some additional Aus Jus mix (I use Johnnys in the bottle).
Remove Roast and thinly slice. Put it in your favorite crusty roll and dip away. Cheese optional. Easily Makes 12 "Beefy" french dipsandwiches.
