Eye of round....to cheesecake

48hr eye of round with beet risotto w/ beet and carrot salad with fresh tagliatelle and grated fresh truffle. Desert was a Joule chocolate and vanilla cheesecake with streusel (and popping candy) topped with a strawberry amaretto sorbet.

FWIW - I found using a red wine and reducing it (also works with quinoa) usually 2-1 (wine to rice) before reduction and adding the stock that matches the protein I'm going to serve seems to make everything fit nicely. Also, reducing the beet juice a bit more (e.g. 300g to 100g) helps to intensify the flavor. Roast the beets before juicing them is also a wonderful twist. Just food for thought.
