Beef braised with rum ...

Years ago I saw/ate this but it was tricky to make .
Now with a Joule I'm reconsidering but having trouble finding a recipe.
The dish was from New Orleans and was a local make-do, red wine was hard to come by.
Anyone know it?

There are dozens of recipes out there for beef braised in red wine as well as beef braised in rum. You mention that it was tricky to make: did you speak to the chef about how it was made? Unless you have more details: the chef, restaurant, etc., I'm not sure anyone is going to have the exact recipe you're looking for.

It was served at a buffet, larded with olives in fact, and the instructions I got were vague (that's being charitable).
My few try's were edible but nothing like the original.
No red wine in the recipe just a medium body rum.

I understand. There have been plenty of dishes that I've tried, that are not able to be recreated for a variety of reasons. Unfortunately, unless you can find out who made it, you're probably SOL. Unless you want to just paw through all the recipes on google, and keep your fingers crossed that it's on there.
Edit: do you know what buffet it was at?

Gonna start with Google and write to friends in NOLA.
I remember that dish and joule should go a long way to recreating it (I've got two nice pieces of beef round from Crowd Cow).
