Yep I set Joule @ 147 degrees, cooked for 8 hours. (that's all I had time for) I would like to do longer next time. Took it out and baked in the oven @ 350 degrees until my desired crispiness

Agree byrdie on the time. I did two batches for 12 hours and my reaction was "meh". I couldn't see any benefit. At 24+ hours however, bam, huge difference in texture. Not that I'm complaining. Never such a thing as having too much bacon. It the gateway meat. I always try give it to my vegetarian friends...
