Im going to have to make some of that cilantro / Scallion Chermoula sounds so good!

Heres how I made it: Sorry for no measurements... I winged it lol:
Handful of cilantro leaves
1 bunch of scallions (Tops only)
Red Wine Vinegar
Chili Flake Honey
1 Garlic Clove
Couple of Ice Cubes
UltraSperse or xanthan gum
Neutral Oil
In a blender combine Cilantro, Scallion, Red Wine Vinegar, Chili, Garlic, Honey and Ice Cubes. Blend on high until smooth. Feel blender Jar to ensure contents are remaining cold. Once Smooth drizzle in oil at 3x the amount of Red Wine Vinegar. Once Emulsified, thicken with Ultra Sperse or Xanthan gum to desired viscosity. Season to taste with honey and salt.

Lol ... I wing it all the time too.
That's the hardest thing when someone asks me for a recipe... bc I cook according to taste and what ingredients I have on hand at the time.
