1lb Ground Pork
2 Sweet Onions (Thin Julienne)
2 Garlic Cloves Sliced Thin
70g Ssamjang
6g Korean Chili Flake (Gochagaru)
200g Fire Roasted Tomatoes
20g Sugar
20g Soy
8oz Silken Extra Soft Tofu
160g Water.
40g Unsalted Butter
Caramelize Ground Pork over High Heat. Once Cooked Remove from pan and reserve. Add Sliced Onion and large pinch of salt. Reduce heat and cook till caramelized deeply. Add a splash of water if pan starts to scorch. Saute garlic briefly. Add Pork Back to pan and add Chili Flake, Sssamjang, and sugar. Cook until aromatic. Add remaining ingredients minus tofu and butter. Bring to simmer and cook until thickened to bolognese viscosity. Season with Honey and Vinegar as needed.
Whisk Tofu in a bowl until smooth like yogurt. Add to sauce and stir until incorporated. Bring sauce to simmer then reduce heat. Add pats of butter piece by piece, swirling pan to emulsify butter. Add Cooked Pasta or Rice Cakes. Season to taste
