Flank, with a corn clam chowder sort of. Made with quinoa cooked in corn stock, clamb juice, finished with corn butter, herbs, crispy pancetta and topped w/ clams and regrown potatoes. Served with beet puree (played with the plating a few times using a "wipe" to try to shape it........needs lotsa work :-) better with the initial spoon serving). For desert a simple puff pastry with light vanilla and orange creamsicle strawberry filling.
