Corn Croquettes

Hi everyone,

I am planning to make a composed Mexican Street Corn Dish (AKA"Elote)".

I am envisioning a Corn Croquette with Corn Salad, Guajillo-Lime Mayo, Cilantro and Cotija cheese.

Does any one happen to have a awesome base croquette recipe that I could use as a starting point? (Recipe in Metric units would be greatly appreciated).

I could Add Corn and Various seasonings to modify recipe.

There's a really nice recipe for a corn croquette in the manressa cookbook. When I get home from work later I could double check for you

It's essentially a corn gel that is cut into cubes and breaded (can be applied to many things). If you have a favorite set of spices for your corn, use it. You can use gelatin or agar to set the gel (if vegetarian is a consideration, use agar), coat in your preferred flour mix and deep fry. It's great for many things. My fave is doing it with roasted green tomatoes.

Thanks! I would assume you fry at a higher temperature to shorten time in the fryer. (Prevent liquid from escaping)..

I have the book and would highly recommend the investment. When researching restaurants for this year's special evening, I opted for Single Thread, but Manressa was a close second.
