Fish was brined and dredged on one side in seasoned cornmeal and seared, then finished in the oven.

For the veloute, fresh corn kernals in butter and some miso, add corn stock, simmer, blend, strain, and add coconut milk.

Veggies beneath are corn, zucchini, red bell pepper, simply sauteed.

Finished with cilantro and cilantro oil.
