Was gifted a large amount of home grown organic tomatoes. Slow roasted a number (similar to hestons), added toasted pine nuts, lemon zest, ricotta and parmesan for ravioli filling......(ya, I know...again.....use it or...freeze it, light enough I used it). With the pulp of the tomatoes, I blitzed on low and strained/pushed through seive. Added various spices and veg (onions, thyme, basil, bay leaf, cloves etc etc), froze it and made a tomato soup consomme.
