Nice!...I've got some Cinchona bark and have been waiting to try this. Been making lots of my own bitters. Made some absinthe bitters with wormwood, fennel, aniseed, etc. Crazy bitter but so good. Did you buy quinine, or use bark for the extract? The jar on the left says 4% - how did you measure that? Refractometer? Extracted into water?

I would be keen if you could share your bitters, especially the absinth one ! I am in the process of making bitters as well... So any new recipe is welcome!
I used powdered quinine, which needs to be carefully filtered to avoid particulate quinine in the final syrup, which can be toxic at high doses. The 4% are 4% in weight, so 4g of powdered quinine in 100g of water, then the whole thing filtered. So yes, technically its not a real concentration as I filtered the powder. Thanks! I'll pull out my notes and send you my 'recipe' for the absinthe bitters. Hard to call it a recipe as it was really just me throwing a bunch of extractables into the siphon in a ratio that seemed reasonable. It's iteration

Any chance you found yoru absinthe note?
Correction to my previous post, its not 4g of quinine in 100g of water, but 100g of alcohol!
