Truffled cheesy seeds (think mac and cheese with truffles, but made with amaranth, quinoa, buckwheat etc), fried root veg (beets, carrots, turnips will use a lighter batter next time), roasted baby beets, onion rings and 26 hr then grilled rib-eye. For desert, beetroot chocolate, apple cranberry, passion-fruit chocolate, dirt, nitro poached van cream and chocolate mousse.
