This looks delicious! When I consider things like this (since when I am at home between trips I have a bit more time for lunch etc), I am always concerned and wonder about bones. I will often do chicken thigh confit (boneless). Do you find the bones a pain? I am not critisizing! just wondering. It would be easier if I didn't remove the bones. :-)

No worries at all sir Todd! I don't mind the bone in as it is almost fall of the bone. However I also did a piece of duck breast at the same time to eat with my salad at work and definitely boneless is the way to go for the same reason. Cheers!!
