Sidenote: Have you tried carbon steel pans yet? They heat up much faster and respond to heat changes more rapidly than cast iron. They are much lighter and have a smooth glossy interior unlike modern cast iron. Love cast iron but I feel thst Carbon Steel is more flexible for daily uses
Best part for me: Much easier to haul around to dinner parties ๐

I have been looking into some good pans that I can use daily.
And me as well of hauling mine around... lol

No problem.. as for daily use pans i use all clad, debuyer and mauviel (stainless). love Carbon Steel for roasting and searing, due to ability to get wicked hot and easy to clean.
I aleays Use stainless for sauces, and delicate veg/proteins

FWIW, I have both. Cast iron does work well and carbon steel is more responsive, and the shapes lend them selves to sauteing without allot of spoon work (e.g flip) and great for searing. Their seasoning is more temperamental I find than cast iron. Imho having both is of great benefit.
