Nice start with truffle explosion from Alinea. Rib eye cut from the bone after 24hr SV, with crispy root veg and garlic pommes puree. For desert an experiment.......Reeses gelato. Dark chocolate peanut butter gelato with chocolate dirt and raspberry druplets.

That Truffle Explosion is to this day one of the best bites I've ever had.

I'm guessing the recipe's in the Alinea cookbook? I haven't bought that one yet. I imagine it has to do with making the broth into a gelatin first, or something like that. I've read similar techniques for making soup wontons or dumplings (Chefsteps, I think).

I had a few of the truffle explosions at The Aviary for my bachelor party pre-game. The server told us that the most anyone had ever eaten was about 6 before the truffle became too overwhelming. I think I can do better but haven't been back to try.

Thanks for reminding me of this. Maybe I'll try to get back there in the next few weeks.

LOL Yes from the Alinea book, and it might be available online by now. It can be easily adapted to many other things. I've also done it with sweet potato/bacon, Smoked chilli (essentially make a smoked chilli and infuse the carrier of choice)...etc etc.
