Had so many little portions of left over ingredients left over from recent dinners, diced shallots, garlic, pork belly fat a few cherry tomatoes etc etc, and looked at the basil plant that was out of control once more...so made a pesto (that was done on sunday). Had fresh Through a couple thai chilis in and some fresh parsley, topped it with basil oil and parmesan/ so, put it all together for a quick less than 20min meal.
