I'm working on this new project of mine, extracting molecular ingredients at home.
Returning back from vacation, I had brought home some locust beans (or carob) with me. I spared the seeds to extract some Locust Bean Gum; and managed to do so (after 1 month of experimenting and reading papers on LBG manufacturing process).

I'm now planning to experiment with Pectin and Lecithin (I have sunflower in mind).
Do you have any ideas on what can be done next? Or have you done similar stuff before?
