Hi all,

I'm looking for someone with a recipe that describes how to properly prepare and cook a pig's head. No idea in what direction to take it yet, just looking for ideas at this point.

This may be on the fringe for some, but I need to do this

My first ever favorite cooking video happens to deal with a pig's head, making porchetta di testa. Never dared to try it

but the video shows how to clean and debone the head.

David Chang's Momofuku cookbook has a recipe for pig head torchon.

Don't know about the rest of it, but I had pig cheeks at a friend's party that blew my mind. S/V for a couple of days, then grilled over wood smoke.

Seems cheeks at both sides of most animals are great eating

But seriously, try a good quality veal cheek and you'll be amazed.

I smoked a whole head for 6-7 hours and had a couple friends over for picking. We served with fresh bread and accompaniments. Came out awesome. Saved the skull for stock.
