Hi guys,
I've been having a particularly stressful time at work lately, which has been playing havoc on my sugar levels. So much so that I have been feeling chronically tired lately. Last night though, was the first time in almost 2 weeks that I had the energy to cook something from scratch, so I made some linguine with homemade rocket and walnut pesto, sauteed baby mushrooms and Parmesan shavings, served with some garlic bread. Really good comfort food.
I also broke the clutch on my food processor, but that's another story...
