yes the cukes were infused in a cvac. I think Dave Arnold published a technique where you can do the same with an isi, but i never tried it.

How did you clarify the gazpacho? Blend and hang? Gelatin freeze-thaw? Quick agar? Pectinex + filter? Or did you take it for a spin?
Good lord, I've been thinking too much about clarification recently.

Spinzall. Pectinex Ultra SP-L for about 30 mins. than Kieselsol and Gelatin. then spin. Came out ok but not awesome so i retreated with Kiselsol and Gelatin and spun again which left me with water clear liquid. I made the mistake of pouring the gazpacho and then carying it over to my photo place so it got a bit cloudy. If i was to serve this at a dinner party i would pour the liquid at the table to make sure it is crystal clear
