Other ways to use sous vide

Can the sous vide unit be placed into a sauce pot to continually stir (without the use of bags) cooking risotto or tapioca or soup, i.e. as a stirrer, not a cooker?

said, no. If you do this, food particles will stick to the heater element and potentially damage the unit. What you could try is something illustrated here:

Check out the set-up they have at step 8. This will allow you to have the temperatures you're looking for while still giving you the ability to stir your food. I hope this helps.
Not using the Joule, I have done this:

Using my Anova. It's a much less complex device and, so far, hasn't broken, although this does void the warranty on this device as well.

First of all it wouldn't stir, it was not designed for that. The idea of sous vide is to circulate water, and

water. As previously said ant other use will void the warranty.
