Don't skip pre-searing. Your sear looks weak enough as it is Like Brian said, pre-searing doesn't require pre-seasoning.

Sorry, yes completely realize pre-sear and salt content are mutually exclusive. Should have separated the thoughts. Next time will try with less salt. Also wanted to try without pre-searing it (in general). *Got lazy with the caption

First time doing a two-bone roast - decided to follow how chefsteps did it with a bit of salt/pepper before pre-searing.

They do like their salt 😊 can't say I ever salt during my pre sear for a roast. Also consider a torch as you can easy navigate around the roast where a pan cannot get to certain places.

At the time, did not have a torch...well still don't have a torch, but in the market for one! I'm all ears for recommendations though
