What pork should look like

Our recent selection (His name is Uncle). Raised at Copiafarms.com. They have a small version of bluehill farms (essentially modelled many of their practices) and have some wonderful pork, eggs, veg and they also left me a few of the Dan Barber squashes :-) etc etc.

If I recall it's a Berkshire Guinea cross, but I'll check. They were breeding for something quite robust for the cold and rich in flavor.

Hi Matt, correction it's a purebred berkshire (apparently registered-not something I would have thought to ask). As I understand it, they will have more of these in the spring as well as may be cross breeding them with another selection (undecided as yet but possibly an ossabow).

thanks! Turns out we have a few local ranchers here in Sonoma that are breeding them. I'm going to check them out.
