I have to make a confession. I use supermarket roast chicken. It's so convenient and easy to use.
Last night I took one of these birds, broke it down into pieces and made a quick roast chicken casserole from it.
I served this with some roast vegetables and a medley of 7 grains, containing White & Brown Basmati rice, Wild Rice, red & white Quinoa, Bulgar wheat, brown lentils and Barley.
