I was looking forward to trying the ChefSteps sous vide octopus recipe and managed to grab some frozen baby octopus instead of the large tentacles from the adults.
Does anyone know how the recipe might change when adapting for the baby octopus? Different temp? Shorter time?
Since it's frozen, should I thaw first?
I know the chefsfeps recipe recommends blanching - should I still pop them in boiling water for 10 minutes?
Any help would be greatly appreciated.
