Butter seared halibut, topped with crispy serrano ham, cured mustard seeds and parsley. Some vegetables; sliced sweet pepper and green beans, fresh ginger lightly seared in clarified butter. Grilled potato slices brushed with egg yolk and some Muscat. Simple butter lemon sauce.
Acidity of the sauce, fresh ginger and sharpness of the black and white cured Mustard was well balanced and not overwhelming the rather soft and light taste of the Fisch. Black mustard seeds are considerably sharper in spiciness than white seeds. It’s the sort of Seed used for the original Dijon mustard.
Halibut was of high quality, glassy core, great taste. Had some chilled Riesling with it.
