I was recently in Spain and had an app I would like to recreate but am not sure how. It was cheese and a mushroom puree but topped with a quail egg, and wrapped in a Philo or wanton type pastry. It was about 1.5 inchs in diameter and was fried quickly. When you cut into it the yolk was still runny. Do you have an idea on how this was done? Please let me know.
