I was recently in Spain and had an app I would like to recreate but am not sure how. It was cheese and a mushroom puree but topped with a quail egg, and wrapped in a Philo or wanton type pastry. It was about 1.5 inchs in diameter and was fried quickly. When you cut into it the yolk was still runny. Do you have an idea on how this was done? Please let me know.

I am assuming it was all in one casing. My thought would be to cook the egg at 62-64c then put that on top of the puree on the phylo and wrap the egg. Then deep fry.

Hi there! I used to be in a common situation and i've just used an cooking app like https://appmirror.net/ and it got the job done. Can't say it's working for now, but it used to and was really convenient. It was like shazam, but for cooking, like that a lot.
