Sirloin mushrooms cauliflower

With tempura onions (love using the carbonated water technique). Combined green cauliflower puree (which is like a cross of sprouts and cauliflower) with mushroom puree, and crispy brussel sprouts.

Looks tasty! I did some sprouts last night and sv'd for the first time. Used the bok choi cook 194/20min with a pad of butter a ground pepper for starting point. Finished them in a pan with a little fine dice bacon fat browned and a touch of turbinado sugar. Turns out it was a really good starting point
Yes the sparking water is the way to go. I put a bottle in the freezer prior to get it nice and cold
