The Risotto is just a basic Parmesan Risotto (If you like I can give you my recipe on that one also?)
For the Cod I try to pick out a nice long filet of Cod thinner the better for rolling. (you can find at Safeway or FredMyer in the Seafood Deli, if you dont have a fresh Farmer Market)
Salt & pepper both sides of Cod and set off to the side -
For the filling -
Fresh Crab (2 large king crabs legs would be plenty)
Handful of Mushrooms
Couple Handfuls of Fresh Spinach
Slice mushrooms and roughly chop spinach and saute until done
while that cooks you can break down the crab set aside in a bowl. When the mushrooms and spinach is done mix together in the bowl with the crab to combine everything together.
Then just spread the mixture lightly on one side of the Cod then carefully roll up and set seam side down into baking dish. I seasoned the top of fish once in the pan with a chile lime rub and then baked @ 350 for about 20 mins. Once I have it all plated sprinkle a bit of parsley on top. (here is a picture of it before I put into the oven)
