Tomato Compression

Hello

I was wondering whether it is possible to compress tomato slices?

I have seen modernist cuisine do it but won't the pressure of the chamber crush the tomato?

If you have any idea on how to achieve this I would really appreciate the feedback

Yes. You'll note that they created it, so that should answer your second question. Follow the process modernist cuisine follows: the a chamber vacuum sealer, etc.

See @brian_100903 response and yes it is possible. Just make sure the slices are not paper thin. You can add flavors if you want as well (e.g. cheese water or brine)

I compress tomatoes whenever I make caprese salad (with the tomatoes sitting in olive oil/balsamic). Compression as such isn't a very useful technique; vacuum infusion is where it's at. Here's a blog post that talks about vacuum infusion that discusses tomatoes.
