What kind of container are you using and what size is it/how much water do you have in it? Are you using a lid or covering of any kind?

Le Crueset stop pot. I also bought a 8 qt with the lid and tried that. I’m filling up right where the water comes out. I have tried covered, half covered and none at all and still can reach its temp.

I recommend using a vessel that's not conductive. Your pots are made out of metal, and the thin enameling offers less insulation than you'd expect. Try a plastic container (make sure it's rated to handle the heat you're going to be using) completely covered with the exception of where the immersion circulator is. You can find prefabricated lids online, or make your own with a hole saw. You could also try insulating the container as well. You said you've tried it covered: do you have a custom lid, or are you using plastic wrap to cover it?

I have the custom lid and container for it.

I would suggest putting in a support request in the Joule app. Or the other thing is you might try cleaning your Joule, a solution of 50/50 water and vinegar and heat to 140° works wonders when my Joules don't heat quickly.
